It's never a bad time to stretch a dollar, but during the coronavirus pandemic, it's an especially good idea to save where we can.

Home-cooked meals will usually save you money compared to eating at a restaurant, but even grocery store bills can add up.

Sapphire Center for Rehabilitation and Nursing of Central Queens has four homestyle recipes that you can enjoy even more knowing that it won't set you back too much cash.

Chicken Soup

Soup is a high-yield meal. You can make it once and have it on hand for a week, depending on the size of your family. Add rice, egg noodles, or matzah balls depending on your individual taste.

INGREDIENTS:

  • 1 whole chicken, cut into pieces

  • 3-4 large carrots, sliced in chunks

  • 3-4 stalks of celery, sliced in chunks

  • 1 medium onion, peeled

  • 1 medium tomato

  • 1 handful of salt

Oven-Fried Chicken

Nothing says homestyle like fried chicken – your own Shake and Bake. Here's a recipe you can bake in the oven with the same desired result. Cook on a baking sheet lined with aluminum foil for 35 (drums and thighs) to 45 (breasts) minutes at 375 degrees.

INGREDIENTS:

  • 1 whole chicken, cut into pieces

  • 1 cup of flour

  • Salt (to taste)

  • Black pepper (to taste)

  • Dash of cayenne pepper

  • Half stick of butter

Pork Tamales

Tamales are a fun alternative to the standard Taco Tuesday. You'll need a slow cooker for this one – cook the pork butt for 7-10 hours on low. This recipe will make 48 tamales.

INGREDIENTS:

  • 5 lbs. pork butt

  • 1 orange, sliced

  • 1 lemon, sliced

  • 8-9 cloves of garlic, smashed

  • 2-3 bay leaves

  • 1 tsp. California (Anaheim) chili powder

  • 4 lbs. Masa Harina

  • 48 corn husk tamale wrappers

  • Salt and pepper (to taste)

Oven-Roasted Korean Chicken

Skip take-out and enjoy this traditional dish that is full of flavor. Once you coat the chicken, cover it in a bowl and marinate for 6-8 hours in the refrigerator. Cook at 375 degrees for 45-55 minutes, flipping the chicken one time at the halfway mark. Serve it with a pot of rice.

INGREDIENTS:

  • 10-12 chicken drumsticks

  • 1 cup gochujang sauce

  • ¼ cup soy sauce

  • ¼ cup mirin

  • 1 tbsp sesame oil

  • 2 tbsp sugar

  • 3 tbsp minced garlic

  • 1 tbsp minced ginger

  • 1 onion

  • Salt and pepper (to taste)
